The holiday season is my favorite time of year, I love everything about it from the decorations, family and friends, parties — and of course, the food! So today, I’m sharing the recipe for my homemade low-carb keto eggnog. It’s rich, creamy, and infused with warm spices, making it the perfect sipper for festive gatherings and cozy nights by the fire.

Now, I must confess that this eggnog recipe holds a special place in my heart, as it’s one of the many delightful concoctions featured in my upcoming cookbook, Easy Keto Entertaining. But since it’s the season of giving, I couldn’t wait to share this delicious drink with you all.

So, without further ado, let’s dive into the world of low-carb eggnog and embrace the holiday spirit with every sip.

Ingredients
  

  • 1 cup unsweetened almond milk
  • 1 cup heavy cream
  • 1 cinnamon stick
  • 4-5 cardamom pods or 1/2 tsp of grated nutmeg
  • 3 egg yolks
  • 1/3 cup sweetener I prefer allulose or monk fruit
  • 1 tsp vanilla extract
  • Brandy, bourbon, rum, or Grand Marnier (optional)
  • Cinnamon sticks for garnish

Instructions
 

  • In a saucepan, combine one cup of unsweetened almond milk and one cup of heavy cream.

  • Add a cinnamon stick and a few cardamom pods for a warm, fragrant twist. However, you can opt for the more traditional nutmeg if you prefer.

  • Set the saucepan over low heat and bring the mixture to a gentle simmer. Allow it to steep for approximately 10 minutes, allowing the cream and spices to meld their flavors.
  • Egg Yolk Mixture: Meanwhile, let's work on the egg yolk mixture. In a separate bowl, separate three egg yolks (don't discard those egg whites; they're perfect for sugar-free meringue!).

  • Add a third of a cup of your preferred sweetener to the egg yolks.

  • Whisk to Fluffiness: Using a hand mixer, whip the egg yolks and sweetener together until they turn fluffy and pale yellow.
  • Incorporate the Creamy Magic: Once the cream mixture has steeped its way to perfection, carefully strain it into a measuring cup, ensuring you retain the cinnamon stick and cardamom pods – they still have a role to play.
  • Gradually incorporate the hot cream mixture into the egg yolks, whisking slowly and steadily. The goal here is to prevent the eggs from curdling while achieving a silky, harmonious blend of flavors.
  • Return to the Stovetop: Place the cream and egg yolk mixture back on the stovetop over low heat. Add a touch of vanilla extract and return the cinnamon stick and cardamom pods to the mix.

  • Let it simmer for an additional 10 minutes, stirring occasionally, until the eggnog thickens and adopts that signature golden hue.
  • Chill and Serve: Afterward, strain the eggnog into a bowl, stirring with the cinnamon stick to expedite the process.
  • Allow the eggnog to cool for about an hour in the refrigerator.
  • Customize Your Festive Sip: When you're ready to serve, feel free to personalize your eggnog. I love offering a selection of spirits on the side, such as bourbon, rum, cognac, or Grand Marnier. Your guests can choose their preferred libation to spike their eggnog to perfection.
