  3. Fresh Cucumber Juice: Pour in three ounces of your freshly made cucumber juice. This is the star of the drink, offering a light, refreshing taste.
  4. Sugar-Free Simple Syrup: For a touch of sweetness, I added about half an ounce of sugar-free simple syrup. This step is optional, depending on your sweetness preference, but it’s incredibly easy to make at home. Simply mix equal parts water and your favorite sweetener, like allulose or monk fruit, and shake it up. This syrup can be stored in the fridge for up to two weeks, making it a convenient addition to any low-carb cocktail.

The Final Touch

Once all the ingredients are combined, shake them up well to ensure they’re nicely mixed and chilled. And just like that, you have a refreshing, summery, and oh-so-good cucumber lime margarita.

Ingredients
  

  • 1 English cucumber peeled and cut
  • 2 teaspoons water
  • 1 ½ oz white tequila
  • Juice of ½ lime
  • 3 oz fresh cucumber juice from the blended cucumber
  • ½ oz sugar-free simple syrup optional
  • For the Sugar-Free Simple Syrup:
  • ½ cup water
  • ½ cup allulose or monk fruit sweetener

Instructions
 

Make the Cucumber Juice:

  • Add the peeled and cut English cucumber to a blender along with 2 teaspoons of water.
  • Blend until smooth, then strain the mixture to extract the juice. You should have about 1 cup of fresh cucumber juice.

Prepare the Sugar-Free Simple Syrup (Optional):

  • In a small saucepan, combine equal parts water and your preferred sweetener (allulose or monk fruit).
  • Heat gently and stir until the sweetener is fully dissolved.
  • Let it cool and store in the refrigerator for up to two weeks.

Build the Margarita:

  • In a cocktail shaker, combine the white tequila, fresh lime juice, 3 ounces of cucumber juice, and the sugar-free simple syrup if using.
  • Add ice and shake well until the mixture is chilled.

Serve:

  • Pour the margarita into a glass, garnish with a lime wedge or cucumber slice if desired, and enjoy!
