  • Zucchini: This will serve as the base for your pizza bites. To ensure even cooking and to save time, I recommend using a mandoline to slice the zucchini into rounds. The uniform thickness will help them cook evenly and quickly.
  • Toppings: For the protein, you can use mini pepperoni slices, but if you’re like me and prefer something different, opt for spicy salami. Chop it into small bite-sized pieces that will fit perfectly on top of the zucchini rounds.
