Once I discovered mug cakes, they became all the rage in our home…we were all experimenting with keto and non-keto mug cake recipes. They’re fairly simple to whip up and in less than 2 minutes, you’ve got a delicious dessert. So, when Birch Benders – who makes some of my favorite keto pancake and waffle mixes – debuted their Birch Benders Keto Cups – microwaveable cakes in a variety of flavors – we couldn’t wait to try them. The variety pack on Amazon comes with their four most popular flavors for around $4 per cup, all under 6g of net carbs. The blueberry muffin flavor has the highest net carb count (6g each), however the brownie cup (my favorite) has half that – 3g of net carbs and the chocolate chip cookie and birthday cake cups have 4g of net carbs each.
Birch Benders also makes a classic maple pancake cup (3g net carbs) which Whole Foods has placed on their list of top 10 food trends for 2021 — a low carb, delicious breakfast that’s fast and easy to make.
Made with a combination of almond and coconut flours along with Tigernut flour, which is not something we see often but is a popular alternative flour for those on a Paleo diet, the Birch Benders Keto Cups feature quality ingredients – like stevia-sweetened chocolate chips and real blueberries – and they fit keto macros too!
The only flavor I didn’t love was the Strawberry Shortcake Pancake – that one tasted a bit too artificial for my taste – however many people I know swear that the Strawberry Shortcake Pancake cup is their favorite!
You can buy single flavors in packs of 8 on the Birch Benders site directly, which is about $1 cheaper per cup – we started with the variety pack to pick our favorites and now keep stocked up with brownie, chocolate chip and classic pancake flavors.
Next week, our review of the Birch Bender Keto Frozen Toaster Waffles is going up! Keep an eye out for that one!
