But something about this edamame spaghetti sparked a glimmer of hope in my carb-conscious heart. So, I thought, “Why not give it a whirl?”

Ripping into the package, I found two pretty hefty packs of spaghetti. For today’s experiment, I decided to use just about a quarter of one pack – gotta save some for future experiments or failures, you know?

Following the instructions to a T, I plopped the spaghetti into boiling water, turned down the heat, and let it simmer away for about 3-5 minutes. Easy peasy. Once it was done, I mixed it up with some chicken and pesto in a saucepan, letting all that pesto-y goodness coat every nook and cranny of the noodles and chicken.

The Moment of Truth 🍴

Alright, so here’s where things got real. I plated up my edamame spaghetti masterpiece, sprinkled some freshly grated Parmesan and cracked some pepper over the top (because we’re fancy like that), and took a moment to appreciate the aroma. Guys, it smelled divine.

Now, the real test – the taste. I’ve had my fair share of low-carb pasta disappointments, so I was bracing myself. But let me tell you, I was pleasantly surprised! The texture was spot on, striking a perfect balance between angel hair and soba noodles.

And the taste? It leaned more towards whole wheat pasta, but the pesto did a stellar job masking any “bean-y” flavor, not that the noodles had a strong taste to begin with. I probably should’ve tried a noodle solo for science, but hey, there’s always next time.
