Enlightened has been on the keto scene for a while with their keto ice cream and ice cream bars, cookie dough bites and individual cheesecakes. I love making keto cheesecake from scratch at home and have a few different recipes here, but when my son (who recently cut out sugar from his diet) picked up Enlightened’s individual cheesecakes on a recent grocery run, I had to try them out!
Enlightened’s cheesecakes come in a variety of flavors and all only come in at 2g of net carbs each. While they have some ingredients I don’t love (carrageenan, modified corn starch and natural flavors) which is why I prefer to make low carb cheesecake at home (and I have this individual-sized recipe too!), these are ready in a flash and will hit the spot when you have a late night sweet craving, for sure. You can defrost in the microwave in a minute, or let them thaw at room temperature for about 30 minutes.
We decided to let them thaw vs. pop them in the microwave, and I have to admit, they were really good. The crust is made with almonds (vs almond flour), so you do get some chunks of almond which is different from a traditional crust, but the flavor and texture of the actual cheesecake is smooth and delicious.
And while these won’t be a regular in our household, I have to say, I am dying to try their key lime flavor because key lime cheesecake is my absolute fave.
