The fine folks at Folios were kind enough to send me a variety of their cheese wraps and at first, honestly, I wasn’t so into them, but I kept them in the fridge for a bit but didn’t post a review for a while. I love lettuce, cabbage and Cut Da Carb wraps typically for keto “sandwiches” and keto tacos, but the raw cheese discs just weren’t doing it for me. Until, I saw one of my favorite Keto TikTok-ers, Erica of TikTokKeto, crisping them up in the microwave and using them as a hard shell to fill with your favorite keto-friendly fillings. I know this is not anything new, however I just hadn’t jumped on that bandwagon. Yet. Now I’m obsessed.
Available in Parmesan, Cheddar and Jarlsberg (my personal favorite), Folios can be used straight out of the fridge as a wrap or as a large, thin slice inside a quesadilla. However I think the true magic of Folios Cheese Wraps for those of us on keto, is that you can pop them in the microwave for two minutes, and they melt into a thin, crispy “tortilla” that can be molded into a taco shell shape or into a bowl.
To mold them, after you microwave them for two minutes (on top of a piece of parchment that is included in the package), you have to immediately put it on a bowl or around a rolling pin for two minutes to cool and settle into the shape. After two minutes, you’re ready to fill it to your heart’s desires!
I whipped up a quick lunch with them earlier this week using some grilled chicken tenderloins that I seasoned with cumin and sugar-free taco seasoning. I made a shell out of the Jarlsberg Folio Cheese Wrap and topped it with avocado, lettuce, sour cream and some hot sauce. It was so delicious and even more delicious that a traditional taco shell!
Next, I’m going to cut the cheddar folios into triangles and use them as my base for nachos — no shredded cheese topping needed! With only 1g of net carbs per wrap, these are a keto must-have for sure.
