Finding satisfying noodles and pasta alternatives can be a challenge when you’re following a low carb or keto lifestyle. While I have found some great options like NuPasta, most of the keto / low carb pasta alternatives haven’t blown me away. So when Immi first hit the keto scene last year with their instant, low carb and keto ramen, I placed an order immediately. I didn’t write a review back then because while the product was tasty, it had some flaws and wasn’t close to mimicking “real” ramen. Recently, Immi revamped their recipes to improve taste, noodle texture AND macros – and the ramen lover in me had to give them another shot.
I bought the Variety Pack which comes with two packs of their three flavors: Spicy Beef, Black Garlic Chicken and Tom Yum Shrimp. Keep in mind, all of Immi’s flavors are 100% plant-based and don’t have meat or fish in them. The packages come with noodles and a spice packet like traditional instant ramen, and it’s worth the effort to dress your bowl up with toppings like real meat, soft-boiled egg and veggies.
I made the Spicy Beef ramen this weekend and topped it with thinly sliced rare filet mignon that we had left over from the previous night’s dinner, chopped cilantro, and sliced green onions and jalapeno. I also added a drizzle of Sriracha because I love to layer on the spices!
And, this new version is DELICIOUS. The noodles had a near perfect ramen noodle texture that stood up to the flavorful broth. While one package is a full serving (21g of protein and 6g of net carbs), I was stuffed after half a bowl – likely thanks to the 18g of fiber per serving (another bonus). All in all, for a low carb and keto-friendly ramen dupe, the new and improved Immi hits it out of the park.

I also just tried the new immi with the shrimp flavor AND IT WAS SO GOOD!! It’s texture isn’t the same as normal instant ramen but it’s close enough. You literally can’t beat the nutrition and fiber amouts !!!!!!
Think I might have to take the plunge and give these a go. I’m a VLC devotee (20g carbs max a day, except if I’m having something a bit different for a change, but even then I don’t like to go over 35g if I want my BG/insulin levels to remain stable. I’m not really bored with what I eat per se, but every now and then I really like the idea of something that isn’t just regular old wholefoods, with a protein bar as a chocolate-esque treat. These might hit the spot for those odd moments when for reasons unknown I just want to eat something with this kind of texture (without the weird vibe that konjac noodles have). I’ve found some on Ebay and will be buying them soon. Wish me luck! (And thanks for the review!)
