  • 2 cups fresh strawberries, hulled and chopped
  • ÂĽ cup sweetener (I used Allulose, but monk fruit, stevia, or honey work too)
  • 2 tsp fresh lemon juice (optional but brightens the flavor)
  • 1 tsp vanilla extract (optional, for added depth)
  • 2 tbsp chia seeds

  1. Cook the Strawberries:
    Add strawberries and sweetener to a small saucepan over medium heat. Add lemon juice and stir. Let it simmer for 5–7 minutes, stirring occasionally.
  2. Mash the Berries:
    As the berries begin to soften, use a potato masher (or the back of a spoon) to gently mash the strawberries into your desired consistency.
  3. Add Flavor:
    In the last minute of cooking, stir in the vanilla extract if using. Turn off the heat.
  4. Add Chia Seeds:
    Sprinkle in the chia seeds and stir well. Let the mixture sit off the heat for 10–15 minutes to allow the jam to thicken.
  5. Cool & Store:
    Pour the jam into a clean jar or container. Once cooled, refrigerate. The jam will continue to thicken as it chills and will keep for up to 2 weeks in the fridge.
