If you’re craving something sweet but still want to hit your protein goals, you’re going to love this easy, creamy 3-Minute High-Protein Berry Cheesecake. It’s fluffy, light, and packed with 40 grams of protein, only 8 grams of net carbs, and just 300 calories!

This is another one of my favorite quick, high-protein desserts — ready in about 5 minutes from start to finish. And the best part? It tastes like a decadent cheesecake, but it’s made with simple, healthy ingredients you probably already have on hand.

3-Minute Berry Cheesecake Recipe

Ingredients:

  • 1/3 cup ricotta cheese (or cottage cheese)
  • 1 generous tablespoon Greek yogurt (plain, non-fat or low-fat)
  • 1 large egg
  • 1 serving vanilla protein powder (I use Isopure Zero Carb)
  • 4–5 blackberries (or any berries you love)
  • Optional toppings: additional berries, sugar-free whipped cream

Instructions:

  1. Make the Cheesecake Base:
    • In a microwave-safe bowl or large ramekin, add the ricotta cheese, Greek yogurt, egg, and vanilla protein powder.
    • Whisk everything together until smooth. (You can use a fork, but I love using a push whisk — it makes it so quick and creamy!)
  2. Add the Berries:
    • Gently press 4–5 blackberries into the cheesecake mixture. They’ll naturally sink a bit as it cooks.
  3. Microwave:
    • Microwave the cheesecake on high for 60–90 seconds, until the center is just set and the edges pull slightly away from the sides. (Every microwave is a little different — mine is perfect at about 90 seconds.)
  4. Top & Serve:
    • Let it cool for a minute or two.
    • Top with a few more fresh blackberries if you want and a little sugar-free whipped cream for an extra treat.
  5. Enjoy!
