Ingredients
  

  • 3 tablespoons almond flour
  • 1 tablespoon coconut flour Alternatively, you can use 4 tablespoons of almond flour
  • 2 tablespoons Swerve sweetener or your choice of low-carb sweetener
  • ½ teaspoon baking powder
  • A pinch of salt
  • 2 tablespoons pumpkin puree Ensure it’s pure pumpkin puree and not pumpkin pie filling to avoid added sugars
  • 2 tablespoons almond milk
  • A dash of vanilla extract Molina Mexican vanilla extract is a delightful choice!
  • 1 large egg
  • ¼ teaspoon pumpkin spice
  • ¼ teaspoon cardamom optional, but it adds a beautiful depth of flavor
  • 1 tablespoon mashed avocado This sneaky ingredient replaces the traditional butter or oil, adding moisture and healthy fats without altering the taste

Instructions
 

  • Start by mixing all your dry ingredients in your mug: almond flour, coconut flour, sweetener, baking powder, salt, pumpkin spice, and if you’re using it, cardamom.
  • Next, add in the wet ingredients: pumpkin puree, almond milk, vanilla extract, egg, and the mashed avocado. Using a fork, whisk everything together until you have a smooth batter with no lumps.
  • Once your batter is well-combined, place the mug in the microwave. Cook on high for between 90 seconds to three minutes. The exact time might vary based on the wattage of your microwave, so keep an eye on it.
  • After cooking, let it sit for a moment, then top it with some zero-sugar whipped topping. For the finishing touch, sprinkle a bit more pumpkin spice on top.
