  • 2 – 3 cups broccoli florets lightly blanched
  • ¼ cup chopped red onion
  • ¼ cup crumbled feta cheese
  • 1/8 cup chopped Kalamata olives
  • 2 tbsp chopped fresh parsley

Greek Dressing Recipe

  • ¼ cup olive oil
  • Juice of 1/2 lemon
  • 1/2 tsp honey or maple syrup I used sugar free
  • 1 clove garlic grated
  • ½ teaspoon dried oregano
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • 1/8 teaspoon crushed red pepper flakes

Instructions
 

  • Lightly blanch the broccoli in boiling water for 1 – 2 minutes – you want them to remain crisp. You can also use the raw broccoli, I just prefer it lightly blanched.

Make the Dressing

  • Whisk all the dressing ingredients together in a medium sized salad or mixing bowl.
