  • 3 Low carb high fiber tortillas
  • 8 eggs beaten
  • 1 ripe avocado sliced
  • 1/2 cup shredded cheddar cheese optional
  • 1 cup cooked shredded chicken
  • Salt and pepper to taste
  • Salsa for serving optional

  • Cook the egg whites in a non-stick skillet over medium heat, seasoning with salt and pepper. Set aside.
