Baked Garlic Butter Salmon

I feature keto salmon recipes a lot – because I eat a whole lot of salmon. It’s so easy to make and full of healthy fats – and is delicious for literally any meal! This garlic butter recipe is one I use in all sorts of dishes – it’s my secret ingredient for my keto garlic butter salmon recipe which everyone asks for how to make it all the time – but also is divine on chicken breast, vegetables and on baked cauliflower.

I serve this over roasted asparagus – the combination of asparagus and salmon is a marriage made in heaven and is filling and delicious. The secret is the keto garlic butter sauce that is perfect with the fatty salmon to bring out the flavors. I use fresh parsley to a hint of fresh herbiness, color and extra flavor. I prefer Italian flat parsley but you can also use curly parsley — what’s great about parsley is that it helps with digestion and is rich in antioxidants, is a natural diuretic and is rich in nutrients that support eye health and heart health – and it’s delicious! So I chop up a generous amount of parsley in my low carb garlic butter recipe, the more the better!

Ingredients
  

FOR THE GARLIC BUTTER

  • 8 tbs butter melted
  • 2 - 3 cloves garlic minced - use 3 if you like your food extra garlicky
  • 1/4 cup fresh parsley rough chopped
  • 1 cup grated parmesan

FOR THE SALMON

  • 1 1/2 lb salmon filet cut into 4 equal portions
  • cooking spray

Instructions
 

FOR THE GARLIC BUTTER

  • In a medium bowl, mix the garlic butter ingredients together until well combined - the mixture will be thick!

FOR THE SALMON

  • Preheat oven to 400?.
  • Cover a baking sheet with aluminum foil and lightly spray with cooking spray.
  • Arrange salmon filets on the sheet and lightly sprinkle with salt and pepper.
  • Cover the top of each with equal portions of the garlic butter mixture.
  • Place sheet in oven for 10 - 12 minutes until fish is cooked through and flaky.
  • Enjoy!
