Belgian-Style Waffles

These waffles are so fluffy and flavorful, you’ll forget that they’re actually good for you. Plus, they’re easy to make––just blend all the ingredients together and cook. Top with sugar-free syrup or try a savory waffle with a slice of Canadian bacon or ham and a poached egg on top.

Combining both almond and coconut flours works well in baking. Using both (1 part coconut flour to 4 parts almond flour) is a great tip to mimic the results of traditional all-purpose flour.

Ingredients
  

  • 4 large eggs
  • 4 ounces full-fat cream cheese at room temperature
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon maple extract optional
  • ¼ cup fine almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon oat fiber
  • ½ tablespoon baking powder
  • 2 tablespoons sweetener I like Allulose
  • Pinch sea salt
  • 1 tablespoon unsweetened almond milk optional
  • Coconut cooking spray or butter for greasing

Instructions
 

  • Heat a waffle iron.
  • Put the eggs, cream cheese, butter, vanilla, maple extract (if using), almond and coconut flours, baking powder, sweetener, and salt in a blender in the order listed and blend on high speed until completely combined. Add the almond milk if you desire a thinner consistency and blend again until combined.
  • Spray the waffle iron with cooking spray.
  • Pour 1/4 cup of batter onto the waffle iron and cook for 2 to 3 minutes or until browned and slightly crisped on both sides.
  • Remove the waffle. Repeat steps 3 and 4 to make 3 more waffles.
  • Serve with your favorite toppings. Refrigerate leftovers for up to 3 days or freeze for up to 1 month.

Notes

Get creative with flavor extracts and toppings, as long as you keep them low-carb and keto-friendly. You may want to try banana extract and walnuts, apple extract and a pinch of cinnamon, or lemon extract with blueberries
