Ingredients
- 4 large eggs
- 4 ounces full-fat cream cheese at room temperature
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
- ½ teaspoon maple extract optional
- ¼ cup fine almond flour
- 1 tablespoon coconut flour
- 1 tablespoon oat fiber
- ½ tablespoon baking powder
- 2 tablespoons sweetener I like Allulose
- Pinch sea salt
- 1 tablespoon unsweetened almond milk optional
- Coconut cooking spray or butter for greasing
Instructions
- Heat a waffle iron.
- Put the eggs, cream cheese, butter, vanilla, maple extract (if using), almond and coconut flours, baking powder, sweetener, and salt in a blender in the order listed and blend on high speed until completely combined. Add the almond milk if you desire a thinner consistency and blend again until combined.
- Spray the waffle iron with cooking spray.
- Pour 1/4 cup of batter onto the waffle iron and cook for 2 to 3 minutes or until browned and slightly crisped on both sides.
- Remove the waffle. Repeat steps 3 and 4 to make 3 more waffles.
- Serve with your favorite toppings. Refrigerate leftovers for up to 3 days or freeze for up to 1 month.
Notes
Get creative with flavor extracts and toppings, as long as you keep them low-carb and keto-friendly. You may want to try banana extract and walnuts, apple extract and a pinch of cinnamon, or lemon extract with blueberries
