Ingredients
- 2 skinless, boneless chicken breasts cut in half
- 1 large egg
- 1/2 cup Greek yogurt
- 1/4 cup water
- 1 tablespoon hot sauce
- 1/2 cup pork rind crumbs
- 1/2 cup almond flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons melted butter
Spice Blend:
- 3 tablespoons cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 2 tablespoons brown sweetener e.g., Swerve
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
Spice Blend:
- Begin by creating your spice blend. Mix cayenne pepper, paprika, chili powder, brown sweetener, garlic powder, onion powder, salt, and black pepper in a small bowl. Set aside.
Preparing the Chicken:
- Slice each chicken breast in half so that they fit perfectly on your bun.
- Coat the chicken with half of the spice blend generously. Allow it to marinate in the refrigerator for about an hour.
Coating Mixture:
- In a shallow bowl, combine Greek yogurt, one egg, a few dashes of your favorite hot sauce, and a touch of water. Whisk until well blended.
Breadcrumb Substitute:
- In another shallow bowl, mix almond flour and pork rind crumbs. Season with salt and pepper.
Coating the Chicken:
- Dip each seasoned chicken piece into the spicy yogurt and egg mixture to ensure it’s well coated.
- Dredge the coated chicken through the almond flour and pork rind crumb mixture, making sure both sides are evenly coated.
Air Frying:
- Preheat your air fryer to 400°F.
- Spray the air fryer basket with cooking spray and place each coated chicken breast inside.
- Lightly spray the tops of the chicken with cooking spray as well.
- Air fry for 8-10 minutes on each side until the chicken is cooked through.
Finishing Touch:
- In a separate bowl, mix the remaining half of the seasoning blend with 2-3 tablespoons of melted butter.
- Brush this flavorful mixture onto the cooked chicken for an extra burst of deliciousness.
Assembling the Sandwich:
- Serve your crispy chicken on your favorite low-carb burger bun.
