Easy & Quick: Just a few ingredients and 20 minutes in the oven!
Versatile: Enjoy as a snack, salad topper, or soup garnish.

Ingredients You’ll Need

To make these crispy roasted chickpeas, you’ll need:

  • 1 can (15 oz) chickpeas (garbanzo beans), rinsed and dried
  • 1 tbsp avocado oil (or olive oil)
  • ¼ cup grated parmesan cheese (fresh or jarred)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika (optional, adds a smoky flavor)
  • Salt & black pepper, to taste

What You’ll Need:
✔️ Baking sheet
✔️ Parchment paper
✔️ Mixing bowl
✔️ Paper towels

How to Make Crispy Parmesan Chickpeas

Step 1: Prep the Chickpeas

I start by rinsing and thoroughly drying the chickpeas with a paper towel. Getting them as dry as possible is the key to getting them super crispy in the oven.

Step 2: Season the Chickpeas

I place the chickpeas in a mixing bowl and toss them with avocado oil (or olive oil). Then, I add the seasonings:
✔️ Garlic powder
✔️ Onion powder
✔️ Smoked paprika (for a little smoky kick)
✔️ Salt & black pepper
✔️ Grated parmesan cheese

I gently mix everything together, making sure the chickpeas are well coated without smashing them.

Step 3: Bake to Perfection

1️⃣ I preheat my oven to 400°F (200°C).
2️⃣ I line a baking sheet with parchment paper and spread the chickpeas out in a single layer—this helps them crisp up evenly.
3️⃣ I roast them for 15-20 minutes, shaking the pan halfway through to make sure they cook evenly.

Step 4: Let Them Cool & Enjoy!

Once the chickpeas are golden brown and crispy (mine usually take 18 minutes), I remove them from the oven and let them cool for a few minutes. They’ll crisp up even more as they cool!

How I Use These Crispy Chickpeas

🔹 As a Snack: I love munching on these straight out of the bowl—they’re so addictive!
🔹 Salad Crouton Alternative: I toss them onto my Caesar salad instead of croutons for extra crunch.
🔹 Soup Garnish: They’re amazing on top of creamy tomato soup or butternut squash soup.
🔹 In Wraps & Bowls: I add them to burrito bowls, grain bowls, and wraps for extra texture.

Taste & Texture Review

Super Crispy: They turn out perfectly crunchy every time!
Savory & Cheesy: The parmesan cheese makes them rich and flavorful.
Slightly Smoky: I love how the smoked paprika gives them an extra depth of flavor.
Totally Satisfying: These keep me full and help curb my cravings for chips!

Customize Your Crispy Chickpeas!

🔹 Make Them Spicy: Add cayenne pepper or red pepper flakes for some heat.
🔹 Herb Lovers: Try adding Italian seasoning or dried basil.
🔹 Lemon Zest: I sometimes add fresh lemon zest after baking for a citrusy twist.
🔹 Sweet & Savory: If I’m in the mood for something different, I toss them with cinnamon and a pinch of brown sugar.

Frequently Asked Questions (FAQs)

1. How Do I Store These?

I store leftovers in an airtight container at room temperature for up to 3-4 days. If they lose some crispiness, I pop them back in the oven for a few minutes to refresh them.

2. Can I Use Dry Chickpeas Instead of Canned?

Yes! If you have the time, soak and cook dry chickpeas before drying and roasting them. They turn out even crispier!

3. Are These Chickpeas Keto-Friendly?

Chickpeas are higher in carbs, so they’re not strictly keto, but they fit well into a low-carb, high-fiber diet in moderation.

4. Can I Air-Fry These Instead of Baking?

Yes! I love making these in my air fryer at 375°F (190°C) for 12-15 minutes, shaking the basket halfway through.

5. Why Aren’t My Chickpeas Crispy?

🔹 Make sure they are completely dry before baking.
🔹 Spread them out in a single layer on the baking sheet.
🔹 Let them cool after baking—they crisp up even more!

6. Can I Make These Vegan?

Yes! Just swap the parmesan cheese for nutritional yeast or a dairy-free cheese alternative.
