Curried Tuna Salad: A Protein-Packed Quick Lunch

If there’s one thing to know about me, it’s my unwavering love for tuna. I find myself reaching out for it every time I’m in the mood for a nourishing meal that doesn’t take forever to prepare. And this curried tuna salad? It’s the epitome of a hassle-free, delicious and high protein lunch!

One of the many things I adore about this recipe is its simplicity. Ready in just 5 minutes, it’s perfect for those mid-work lunch breaks or even a lazy Sunday brunch. But don’t be fooled by its quick prep time – it packs a whopping 40 grams of protein and an explosion of flavors that dance on the palate.

Unlike the traditional tuna salad, this version gets a spicy twist with the addition of curry powder. The curry not only imparts a golden hue but also introduces a depth of flavor that’s truly unique. The hard boiled egg is my little secret – it ramps up the protein content and lends a creamy texture to the salad.

Ingredients
  

  • 1 can tuna
  • 1 hard boiled egg chopped
  • 1/2 – 1 teaspoon curry powder
  • pinch salt
  • 1/4 cup mayo
  • 2 tbsp golden raisins
  • ¼ red onion diced
  • 2 stalks celery diced
  • Handful of cilantro chopped

Instructions
 

  • In a mixing bowl, combine the tuna, chopped hard boiled egg, mayo, and curry powder. Mix well.
  • Add in the golden raisins, diced red onion, and sliced celery. Stir to combine.
  • Season with a pinch of salt and adjust according to taste.
  • Finish with a sprinkle of freshly chopped cilantro for an added layer of freshness.
  • Serve immediately or refrigerate for later.
