Easy, Delicious Shrimp Tacos

Hey there, fellow foodies! Today, we’re diving into one of my all-time favorite recipes: low-carb shrimp tacos. Whether you’re on a low-carb diet or not, these tacos are a flavor explosion you won’t want to miss. Picture this: succulent spiced shrimp, tangy slaw, creamy guacamole, and zesty lime crema, all coming together in a delicious dance of flavors.

Now, before we get into the nitty-gritty of this recipe, let’s talk about that lime crema. It’s the secret sauce that ties everything together. Zest up a lime, squeeze out its juicy goodness, add a dash of cayenne pepper, and mix it up with some plain Greek yogurt or sour cream. Pop it in the fridge to let those flavors mingle while we work on the rest.

Our slaw is next in line, and it’s a game-changer. We’re talking vibrant purple cabbage, a hint of jalapeno kick, some sugar-free honey (yes, you read that right!), a pinch of salt, and the rest of that lime juice. Sweet, spicy, and tangy – it’s the perfect slaw.

Now, let’s whip up some quick and easy guac. Avocado, cilantro, red onion, garlic, and a few tablespoons of your favorite salsa. Boom, guacamole done.

Last but not least, it’s shrimp time. We’re talking juicy, medium-sized shrimp sauteed with a touch of avocado oil and a medley of mouthwatering spices. Three to four minutes on each side, and they’re good to go.

Now, warm up your tortillas in the same skillet that sizzled your shrimp. I’m using Mission’s zero-carb tortillas for that guilt-free experience.

Assemble your tacos like a pro: slaw on the tortilla, shrimp on top, a generous scoop of guac, and a drizzle of that heavenly lime crema.

And there you have it, my friends – the best low-carb shrimp tacos you’ll ever taste. Trust me; your taste buds will thank you later. Enjoy!

For the Lime Crema:

  • 1/4 cup plain greek yogurt or sour cream
  • zest of 1 lime
  • 1/4 tsp cayenne pepper
  • juice of 1/2 lime

For the Slaw:

  • 2 cups shredded cabbage I use purple cabbage
  • 1 jalapeno pepper chopped
  • juice of 1/2 lime
  • 1 tbsp honey I used ChocZero sugar-free honey substitute
  • pinch salt

For the Easy Guacamole:

  • 1 avocado
  • 1/8 cup chopped cilantro
  • 1/4 red onion diced
  • 1 garlic clove minced
  • 2 tbsp salsa

For the Shrimp:

  • 1 lb medium shrimp
  • 1 tbsp avocado oil
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne
  • 1/2 tsp crushed red chili flakes
  • 8 taco-sized tortillas I use Mission's Zero Carb Tortillas

For the Lime Crema:

  • Zest the lime into a small ramekin and add the juice of 1/2 of it.
  • Add cayenne pepper and Greek yogurt or sour cream.
  • Mix until smooth.
  • Pop the crema in the fridge to let those flavors mingle while we work on the rest.

For the Slaw:

  • In a medium bowl, combine all the ingredients and toss to mix.

For the Quick and Easy Guacamole:

  • Add all the ingredients into a small bowl and mix with a fork to break up the avocado and stir until combined.

For the Shrimp:

  • In a small bowl, toss the shrimp with the salt, garlic powder, onion powder, cumin, smoked paprika, cayenne, and crushed red chili flakes.
  • Heat a large skillet over medium-high heat and add the avocado oil. Let it heat up for a minute or so until it’s nice and hot.
  • Toss the shrimp into the skillet, making sure they’re in an even layer. Let them cook for about 2-3 minutes on one side until they start to turn pink and slightly opaque.
  • Continue to cook the shrimp for an additional 2-3 minutes or until they’re fully pink, opaque, and cooked through. Be careful not to overcook them; you want them tender and juicy.

Making the Tacos

  • I like to use Mission's Zero Carb Tortillas, and toast them quickly in the skillet before putting the tacos together.
  • Add some slaw to the tortilla, top with 2 – 3 shrimp, some guacamole and the lime crema as the finisher. Enjoy!
