Ingredients
  

  • 8 oz salmon filet skinless

For the Salmon Rub:

  • Olive oil for coating
  • 2 tsp Chili powder
  • 2 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • Salt and Pepper to taste

For the Avocado Salsa:

  • 1 large Avocado diced
  • 1/2 cup Tomatoes preferably sweet cherry tomatoes, chopped
  • 1/4 cup Red onion finely chopped
  • 1 small Jalapeño diced (seeds removed for less heat)
  • 1/4 cup Fresh cilantro chopped
  • Juice of 1 Lime
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper

Additional:

  • Jicama wraps for serving
  • Shredded cabbage for topping

Instructions
 

  • Prepare the Salmon: Start by drizzling olive oil over the salmon fillet. Combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper, and rub this mixture onto the fish. You can choose to air fry at 400ºF for 10 – 15 minutes or bake at the same temperature for about 20 minutes until the salmon is perfectly cooked.
  • Create the Avocado Salsa: In a medium bowl, toss together the diced avocado, tomatoes, red onion, jalapeño, and cilantro. Add the fresh lime juice and season with cumin, salt, and pepper. Mix everything well so that the avocado and veggies are well coated with the flavors.
  • Assemble the Tacos: Lay out the jicama wraps on a taco stand or flat surface. Once your salmon is cooked and flaked, distribute it evenly among the wraps. Spoon the vibrant avocado salsa over the salmon and finish by topping with shredded cabbage for a satisfying crunch.
