Ingredients
  

For the Chipotle Cheese Sauce:

  • 1/2 cup cottage cheese
  • 1 chipotle pepper in adobo
  • 1/2 tablespoon adobo sauce
  • 1/2 cup shredded Mexican cheese
  • A handful of fresh cilantro

For the Chicken Filling:

  • 6 ounces cooked chicken breast e.g., rotisserie chicken
  • Olive oil for sautéing
  • Preferred seasoning e.g., taco seasoning
  • Low-carb spinach herb tortilla for wrapping
  • Toppings: red onion, shredded lettuce, tomatoes, shredded cheese, black beans, jalapenos, olives, salsa, sour cream, etc.

Instructions
 

Prepare the Chipotle Cheese Sauce:

  • In a blender, combine cottage cheese, one chipotle pepper in adobo, adobo sauce, shredded Mexican cheese, and fresh cilantro.
  • Blend until the mixture is smooth and well combined.
  • Set the sauce aside for later use.

Sauté the Chicken:

  • Heat a pan with olive oil over medium heat.
  • Add the chopped chicken breast to the pan and lightly coat it with the olive oil.
  • Season the chicken with your preferred spices or a seasoning packet.
  • Once the chicken is well seasoned, pour the prepared Chipotle Cheese Sauce over it.
