High Protein, High Fiber, Low Carb Cilantro Lime Chicken Tacos Recipe

Hey everyone! Today, I’m super excited to share one of my favorite healthy recipes with you – cilantro lime chicken tacos. These tacos are perfect for a quick, nutritious meal that’s high in protein, high in fiber, and low in carbs. They’re easy to make and bursting with fresh flavors. Recipe: High Protein, High Fiber, Low Carb Cilantro Lime Chicken Tacos

Ingredients:

For the Cilantro Lime Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • 1/2 cup chopped cilantro (substitute parsley if preferred)
  • 1 teaspoon pink salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin

For the Tacos:

  • Low carb, high protein, high fiber tortillas
  • Fresh cilantro
  • Sliced radish
  • Pickled red onion
  • Cotija cheese
  • Sliced avocado
  • Cilantro lime crema (recipe below)

Instructions:

  1. Prepare the Chicken:
    • Start by pounding the chicken breasts until the thicker end is the same thickness as the thinner end. This ensures even cooking.
    • Place the chicken breasts in a Ziploc bag. Add olive oil, lime zest, lime juice, minced garlic, chopped cilantro, pink salt, black pepper, and cumin.
    • Remove the air from the bag, seal it, and massage the marinade into the chicken. Let it marinate in the fridge for at least an hour, but you can leave it up to overnight for more flavor.
  2. Cook the Chicken:
    • Preheat your air fryer to 380 degrees Fahrenheit.
    • Place the marinated chicken breasts in the air fryer basket and cook for about 10 minutes, or until the internal temperature reaches 165 degrees Fahrenheit. You can also bake or grill the chicken if you prefer.
    • Once cooked, let the chicken rest for a few minutes before slicing it into 1/4 to 1/2 inch thick strips.
  3. Assemble the Tacos:
    • Warm the low carb, high protein, high fiber tortillas.
    • Lay the sliced chicken on the tortillas.
    • Add fresh cilantro, sliced radish, pickled red onion, cotija cheese, and avocado slices.
    • Drizzle with cilantro lime crema (recipe below).
  4. Cilantro Lime Crema:
    • Mix together 1/2 cup Greek yogurt, 1 tablespoon lime juice, 1 tablespoon finely chopped cilantro, and a pinch of salt. Adjust to taste.
  5. Serve and Enjoy:
