High Protein Reuben Dip

If you’ve ever found yourself craving a delightful savory dip that’s low in carbs but high in flavor, you’re in for a treat. Today, I’m excited to share with you a twist on one of the recipes from my “Keto Carbs Cookbook for Beginners,” called the “Reuben Skillet.” This recipe leverages the viral cottage cheese dip method that’s taken over social media and which has recently become my favorite obsession.

A classic Reuben is a delectable sandwich that originated in the United States, boasting a symphony of flavors and textures. It traditionally consists of corned beef, Swiss cheese, sauerkraut, and Russian dressing, all grilled between slices of rye bread. This low carb dip version has all the flavors of the classic, reimagined in a low carb dip. I like to dip low carb tortilla chips in this, but it’s great with toasted low carb bread, or even veggies!

Low Carb Reuben Skillet Dip

Ingredients
  

  • 1/2 cup cottage cheese
  • 2 oz Swiss cheese shredded (plus more for topping)
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1 – 2 tsp horseradish sauce
  • 1 tbsp mayo
  • 2 oz chopped corned beef
  • 1/2 cup coleslaw mix
  • Low carb tortilla chips for serving I recommend Mr. Tortilla’s low-carb tortilla chips

Instructions
 

  • In a blender, combine the cottage cheese, Swiss cheese, garlic powder, onion powder, horseradish sauce, and mayo. Blend until smooth. If the mixture appears too thick, add a tablespoon of mayo to achieve the desired consistency.
  • Transfer the blended mixture to a silicone air fryer pan or a skillet suitable for baking.
  • Add the chopped corned beef and coleslaw mix to the pan. Stir the ingredients together, ensuring they’re well-combined.
  • Top the mixture with an additional layer of shredded Swiss cheese.
  • If baking in an oven, place the skillet in a preheated oven at 350°F for about 15 minutes. If using an air fryer, set it to 350°F and cook for 7 to 10 minutes. In both cases, the dish should emerge browned and bubbly.
  • Once cooked, remove from the oven or air fryer and let it cool slightly.
  • Serve the Reuben Skillet Dip warm with your favorite low-carb tortilla chips.
