Ingredients

  • 2 tablespoons cream cheese softened
  • 2 tablespoons Greek yogurt
  • 1 egg
  • ½ scoop of vanilla protein powder I use IsoPure Zero Carb for that extra protein kick without the carbs
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder

Instructions

  • Mix it up: In your favorite mug (yes, that one!), mix the cream cheese and Greek yogurt until smooth. Crack in the egg, add the vanilla protein powder, vanilla extract, and baking powder. Grab a whisk (those tiny ones I found on Amazon are perfect for this) and whisk away until everything is well combined and smooth.
  • Microwave Magic: Pop your mug in the microwave and set it to 50% power. This part is crucial because we don’t want to zap our lovely mixture into oblivion. Microwave it for about three minutes, but here’s a pro tip: check it every minute. Microwaves are as unique as we are, so timing can vary.
  • Chill Out: Once it’s done (you’ll know because it starts to pull away from the sides of the mug), let it chill in the fridge. I usually give it about 30 minutes to an hour, making it the perfect timing to enjoy post-dinner.
  • The Best Part – Toppings!: After chilling, take your cheesecake out and top it with diced strawberries. I then add a dollop of zero sugar whipped cream (a little goes a long way) and sprinkle a few more strawberries on top for that burst of freshness.
