  • 4 medium zucchini halved lengthwise
  • 1 tablespoon avocado oil
  • 1 lb ground turkey or turkey sausage
  • 1/2 cup thinly sliced bell peppers
  • 1/2 red onion thinly sliced
  • 1 jalapeno pepper diced
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • 1 tablespoon tomato paste
  • 1/2 cup shredded monterey jack cheese
  • ¼ cup chopped fresh cilantro

Instructions
 

  • Begin by slicing the zucchinis in half lengthwise, creating your zucchini boats.
  • Arrange the zucchini halves cut-side down in your air fryer. Air fry them until they become tender, which should take around 10-15 minutes at 400ºF.
  • While the zucchinis are cooking, heat the avocado oil in a large nonstick skillet over medium-high heat. Add the ground turkey and veggies, stirring often, until the turkey browns, and the peppers become tender. This process usually takes about 5-6 minutes.
  • Stir in the garlic, chili powder, ground cumin, salt, dried oregano, and smoked paprika. Continue sautéing until the mixture becomes fragrant, which should take approximately 1 minute.
  • Add the tomato paste to the skillet, sautéing for an additional minute until the turkey and veggies are evenly coated, and the mixture thickens.
  • Once the zucchini halves are tender, carefully scoop out the center from each zucchini half, leaving a 1/4-inch-thick shell. Mash the scooped-out zucchini flesh and stir it into the turkey mixture.
  • Arrange the zucchini halves cut-side up in your air fryer basket.
  • Stuff each zucchini half with approximately 1/4 cup of the turkey mixture.
  • Sprinkle shredded cheese evenly over the stuffed zucchinis.
  • Air fry the stuffed zucchinis at 400ºF for 5 minutes or until the cheese becomes melty and deliciously golden brown.
