High-Protein, Sugar-Free No-Bake Cheesecake Bites

If you’re on a weight loss journey like I am, you know how important it is to find satisfying, delicious treats that won’t derail your progress. I’ve lost over 80 pounds by incorporating high-protein, sugar-free desserts into my diet, and today, I’m excited to share one of my favorites: No-Bake Cheesecake Bites. Each bite packs 7 grams of protein and only 85 calories, making them the perfect guilt-free indulgence. Let’s dive into the recipe!

Optional Graham Cracker Crust

While these cheesecake bites are delicious on their own, I like to add a flavorful graham cracker crust to the bottom for an extra bit of texture and taste. This step is entirely optional, but if you’re looking to elevate your cheesecake bites, here’s how you can do it:

  1. Ingredients for the Crust:
    • 1/4 cup almond flour
    • 1 tablespoon melted coconut oil
    • A few drops of sugar-free graham cracker flavoring (available on Amazon)
  2. Instructions:
    • Combine the almond flour with the melted coconut oil.
    • Add the sugar-free graham cracker flavoring and mix quickly until the mixture resembles wet sand.
    • Press about a tablespoon of the mixture into the bottoms of your muffin liners to create a crust.

Cheesecake Filling

Now for the star of the show—the cheesecake filling. This high-protein mixture is creamy, smooth, and full of flavor. Here’s what you’ll need:

Ingredients:

  • 1 block of softened cream cheese
  • 1/2 cup plain Greek yogurt (I use Fage 0%)
  • 2 servings of your favorite protein powder (I recommend Isopure Zero Carb)
  • 1 tablespoon powdered sweetener (Boca Sweet is my go-to)
  • 1 teaspoon vanilla extract

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, Greek yogurt, protein powder, powdered sweetener, and vanilla extract.
  2. Mix the ingredients together until smooth and well combined.

Assembly:

  1. Divide the cheesecake mixture evenly among the 12 muffin cups, on top of the optional graham cracker crust if you chose to include it.
  2. Place the filled muffin cups in the fridge for 2 to 3 hours to chill and set.

Serving Suggestions

Once the cheesecake bites have finished chilling, they’re ready to enjoy! Simply pop them out of the molds and, for a fresh twist, top each one with a berry of your choice. Raspberries, blackberries, and strawberries all pair beautifully with the creamy cheesecake filling. Today, I’m using strawberries, but feel free to experiment with your favorite fruits.

Storage

These no-bake cheesecake bites will stay fresh in the fridge for up to a week, making them an excellent make-ahead dessert or snack. If you prefer, you can also store them in the freezer for up to a month, ensuring you always have a healthy treat on hand.

  • 1 tsp vanilla extract

Optional Base:

  • 1/4 cup almond flour or crushed graham crackers
  • 2 tbsp coconut oil melted
  • Optional: A few drops of graham cracker flavoring

Instructions

  • Smooth the tops with a spoon or spatula to create an even surface.

Chill and Set:

  • Place the muffin tin in the refrigerator and let the cheesecake bites chill for at least 2-3 hours, or until firm.
  • For a firmer texture, you can freeze them for about 1 hour before serving.

Serve:

  • Once the cheesecake bites are set, remove them from the muffin tin and top each with fresh berries of your choice.

  • Store the cheesecake bites in an airtight container in the refrigerator for up to 5 days, or freeze them for up to a month.
