- 4-6 chicken thighs preferably bone-in for maximum flavor
For the Marinade:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup coconut aminos soy sauce works as a substitute
- 1/4 cup Worcestershire sauce
- Juice of 1/2 lemon
- 2 tbsp Dijon mustard
- 1/8 cup honey I use ChocZero’s keto-friendly honey substitute
- 2 tsp Italian seasoning
- 1 1/2 tsp salt
- 1 tsp pepper
- 2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 3/4 cup brown sugar substitute Swerve or Lakanto are my go-to choices
Mix the Wet Ingredients:
- In a one-gallon Ziploc bag, combine the olive oil, balsamic vinegar, coconut aminos, Worcestershire sauce, lemon juice, Dijon mustard, and honey.
- Give the bag a gentle massage to mix these ingredients well.
Add the Seasonings:
- To the same bag, add the Italian seasoning, salt, pepper, garlic powder, onion powder, smoked paprika, and brown sugar substitute.
- Again, massage the bag gently to incorporate all the seasonings with the wet ingredients.
Marinate the Chicken:
- Add your chicken thighs to the bag.
- Seal the bag, ensuring to remove as much air as possible.
- Massage once more to ensure the chicken is well-coated with the marinade.
- Place the bag in the refrigerator and allow the chicken to marinate for at least 30 minutes, but up to four hours for a deeper flavor infusion.
- Preheat your grill. Once heated, place the marinated chicken thighs on the grill.
- Cook until the internal temperature of the chicken reaches 165°F.

For air frying:
