Keto Chia Seed Pudding: The Ketology Way

Chia pudding has been a staple in my diet since long before I went on a keto-based diet. Keto Chia Seed Pudding is easy to make — it’s very much like making overnight oats — but packed with fiber, protein and anti-oxidants that provide tons of health benefits and energy along with good fats and will fill you. Oh, and this keto chia pudding is delicious too! I add some extra power-packed superfoods – like hemp hearts and maca powder to make this Chia Pudding recipe Ketology friendly too — which means it’s low carb and packed with protein and good fats, but also has anti-aging benefits as well.

Chia pudding actually only takes about 30 minutes to set, so if you make this first thing in the morning, it will be ready to eat once you’re showered and ready for the day. I like to make it before bed the night before because I think the flavors develop and the blueberries I like to add to mine plump up to perfection, however if you make this last minute, it will still be delicious and insanely good for you.

You can certainly experiment with berries and nuts — or other keto-friendly toppings like unsweetened coconut shavings or sugar-free chocolate chips, however this combo of the core ingredients in my keto chia seed pudding along with with blueberries and sliced almonds is my standby recipe. I use almond milk in mine, however you can also substitute for your favorite nut milk or cow’s milk.

I do have a version in my free Ketology Guide that uses kefir, which is also delicious but results in a much thicker, yogurt type breakfast. Try them both and see which you prefer!

A note on Maca Powder: this tasteless powder is made from – you guessed it – maca which is a Peruvian cruciferous root vegetable. It’s been a hot supplement for a while and with good reason – the powder is used by athletes to boost energy however the real benefits lie in its help in regulating hormones – specifically in pre-menopausal and menopausal women – and helps stabilize mood swings.

Also – maca is beneficial in alleviating stress, increasing libido (always a good thing), and improving brain function. It’s a Ketology essential supplement because it helps balance and reverse many symptoms we experience as we enter and go beyond peri-menopause.

  • In a mason jar or airtight container, combine all ingredients.
  • Stir well to make sure the chia seeds don't stick to the edges.
  • I then like to seal the container and give it a vigorous shake for good measure.
  • Refrigerate for a minimum of 30 minutes or overnight.
  • Enjoy in the AM with a few fresh berries on top!
