Keto Cinco De Mayo Menu: All the Flavor without the Carbs

Cinco de Mayo is this Friday! I love Cinco De Mayo — what’s not to love? Tacos, chips and guacamole, margaritas! Thankfully, making a low carb Cinco De Mayo menu with delicious keto recipes is easy thanks to the variety of hacks and keto-friendly alternatives to make a low carb and delicious — and festive! – menu. These keto Mexican recipes – including keto tacos and even my popular keto margarita recipe – will become a favorite beyond today’s festivities! Olè!

There are so many great options to use as keto-friendly tortilla and taco shell dupes: Cut Da Carb flatbreads are hands down my favorite, and Folio’s also work well and are a two-for-one since they also add cheesy goodness! There are so many low carb and keto friendly tortilla options out there now — I will do a round-up of all the options and my favorites soon however you can find them at pretty much any supermarket!

Keto Jalapeno Poppers
Much like keto mozzarella sticks, keto jalapeno poppers are one of my favorite snacks either for myself or on weekends for the family. There's something about the fried and gooey goodness of both that are so comforting and satisfying. Usually, jalapeno poppers are breaded and fried – which makes them not so keto-friendly – but you can easily make them at home using some tried and true keto hacks and either pop the poppers in your air fryer or in the oven for spicy, crunchy, creamy goodness.

Keto Tacos and Low Carb Mexican Main Dishes

Low Carb Fish Tacos
I usually make my keto fish tacos using flounder or sole – sometimes on Sundays at our Farmer's Market I can pick up some super fresh Golden Sole which is our favorite low carb fish taco protein. You want to use a mild fish – and preferably not a heavy fish like salmon – so the flavors of the batter and toppings really come thru. I use coconut flour which is low carb and keto friend works perfectly for a light, crisp batter.

Keto Creamy Tequila Lime Chicken with Zucchini Fettuccini
This is a Keto-friendly version of a popular CPK dish: Creamy Tequila Lime Chicken Fettuccine aka Keto Tequila Lime Chicken with Zucchini Noodles because we subbed zucchini noodles for the pasta and voila! Delicious, creamy and filling – pair it with a low carb margarita and you're al set!
Though the original recipe for this is a dupe for California Pizza Kitchen's Tequila Lime Chicken, but half the time when I make this at home, I substitute the chicken breast for one pound of medium or large shrimp. Otherwise, keep the other ingredients the same and you'll have what is probably my favorite keto shrimp recipe!

Keto Spanish Rice
Cauliflower is a great substitute for rice and you can pretty much find riced cauliflower – both frozen and fresh – at your supermarket. I buy riced cauliflower in bulk at Costco, because we use it so often as a substitute for rice or potatoes in many of my recipes.
I love to serve this keto Spanish rice on the side or in my keto tacos and burritos. Topped with some full fat sour cream and extra cilantro, this recipe is sure to become a keto taco Tuesday staple in your house as well!
