Keto Strawberry Cheesecake Ice Cream

We got an ice cream maker – among so many other kitchen gadgets a couple of years ago – to keep us busy and experimenting during quarantine. My younger son had started making homemade ice cream and loved it so much that I decided to surprise him with a Cuisinart Ice Cream Maker. And, because my older son is newly keto, we started experimenting with keto ice cream. I’ve made low carb ice cream before using the mason jar method which works well, however it’s so much easier and creamier using an ice cream machine!

We tried this keto Strawberry Cheesecake Ice Cream recipe last night and it was SO good. Tastes EXACTLY like rich, creamy ice cream without the carbs! We’ve been using Swerve as our preferred sweetener in our keto frozen desserts – it mixes up the best for us – however for ice cream, in order to nail the creamy texture that is easy to scoop, it’s essential to use equal parts of Swerve (or your favorite sweetener like Monkfruit) and Allulose.

Keto ice cream is easy to make whether you have an ice cream maker or not, however thanks to so many great brands releasing low carb ice creams – you can also find good options at the market. I love Halo Top and Enlightened and a few others are crushing the keto ice cream bar game.

But wait, are berries keto?

Berries, in moderation, are ok on keto. they are low on the glycemic index and strawberries come in at 8g of net grams per cup. We’re using 3/4 cup in this whole recipe, so strawberries are a-ok on keto in moderation!

Keto Strawberry Cheesecake Ice Cream

Ingredients
  

  • 8 ounces cream cheese
  • 1/4 cup Swerve sweetener
  • 1/4 cup granulated Allulose sweetener
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • 3/4 cup fresh pureed strawberry
  • 1 cup heavy cream

Instructions
 

  • In a metal bowl, blend all ingredients until smooth using a hand mixer.
  • Chill in refrigerator for about 1 hour, or until cold.
  • Turn on ice cream machine.
  • Spoon the cooled mixture into the freezing/mixing bowl of machine.
  • Run the machine per it's instructions.
  • Serve or store in a container in the freezer!
