Ingredients

  • 1/2 Red onion thinly sliced
  • 1/2 small Tomato chopped
  • 3 oz deli turkey thinly sliced
  • 1 oz Provolone cheese sliced
  • 2 chili peppers adjust based on your heat preference
  • 2 cups Romaine lettuce roughly chopped
  • 1 oz Freshly grated Parmesan cheese
  • Crushed red pepper flakes
  • Dried oregano
  • Salt and pepper to taste
  • Red wine vinegar
  • 1/4 cup Greek yogurt
  • Low carb tortilla wraps

Instructions

  • Begin by prepping your ingredients: slice your red onion and tomato, chop your romaine, and get your deli turkey and provolone cheese ready.
  • In a large mixing bowl, combine the red onion, tomato, turkey, provolone, and chili peppers. If you’re not a fan of spice, feel free to substitute the chili peppers with something milder.
  • Add in the romaine lettuce, giving you that crunchy texture that’s essential in any good salad wrap.
  • For the dressing, measure with your heart – sprinkle in some garlic, freshly grated Parmesan, a generous pinch of crushed red pepper, and plenty of oregano for that classic grinder flavor profile. Season with salt and pepper according to your taste preferences.
  • Drizzle in some red wine vinegar for acidity and add a quarter cup of Greek yogurt. This is where the magic happens, transforming the ingredients with a creamy coating that’s both tangy and indulgent, yet surprisingly light.
  • Toss everything together until the salad mixture is well coated with the dressing.
  • Lay out a low carb tortilla and pile the salad mixture onto the center. Carefully wrap the tortilla around the filling, tucking in the edges as you roll to ensure a tight wrap.
  • Slice the wrap in half to make it more manageable (and to show off that beautiful cross-section of ingredients!).
