Low Carb Peach Cobbler

I got some beautiful fresh peaches at my farmer’s market this past weekend…so peach cobbler was most certainly on my menu for dessert this week! Although peaches are high in carbs, thanks to other low carb ingredients, each of these individually sized desserts comes in at only 10 grams of net carbs each. A bit of a splurge on a strict keto diet, but it still won’t put you over your daily allowance.

I serve these in individual ramekins. I love baking in small batches — so much so that I wrote a whole cookbook dedicated to small batch baking! Baking in small batches is perfect if you’re the only one in your household on a low carb lifestyle, or when you don’t want leftovers. This recipe serves 3, but can easily be doubled for a larger group. Low Carb Peach Cobbler, which is also keto-friendly, is best served warm and is simple to make, so you can whip it up, bake and serve!

This low carb cobbler recipe also works wonderfully with blackberries or strawberries — which are much lower in carbs. You can serve and enjoy these as they are after they cool slightly, or top with your favorite low carb ice cream or whipped topping. Yum!

🍑 Low Carb Peach Cobbler 🍑 For the filling * 2 large peaches peeled and sliced * 1/4 cup sweetener, I like Allulose or Monkfruit * pinch salt For the batter * 2 tbsp butter * 3/4 cup almond flour * 1/3 cup sweetener * 1 tsp baking powder * 1/3 cup whole milk or nut milk * pinch salt * ground cinnamon to taste INSTRUCTIONS * Add the sliced peaches, sweetener and salt to a saucepan and stir to combine.
* Cook on medium heat for just a few minutes, until the sweetener is dissolved. Remove from heat and set aside.
* Preheat oven to 350F. Arrange 3 ramekins on a baking sheet.
* Add a pat of butter in the bottom of each ramekin. Place the sheet with the ramekins in the oven while it preheats, so the butter can melt. Once melted, remove the pan from the oven – about 3 – 4 minutes.
* In a medium bowl, mix the almond flour, sweetener, baking powder, and salt. Stir in the milk until just combined. It’s ok if it’s lumpy.
* Divide the mixture evenly among the ramekins on top of the butter.
* Spoon the peaches and juice over the batter.
* Sprinkle cinnamon on top.
