Ingredients
  

  • 1 Spaghetti Squash
  • 1/2 Small Yellow Onion finely chopped
  • 1 Clove Garlic minced
  • 2 tsp Olive Oil
  • 1 Pound Ground Bison or protein of choice like ground turkey or beef
  • 1/2 Can Black Beans rinsed

Spices:

  • 2 tsp Cumin
  • 2 tsp Smoked Paprika
  • 1 tsp Cayenne
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 oz Shredded Cheese Mexican blend recommended
  • 1/2 Cup Cottage Cheese preferably creamy
  • Fresh Cilantro chopped (optional)

Instructions
 

Preparing the Spaghetti Squash

  • Microwave for Easy Cutting: Start by microwaving the whole spaghetti squash on high for about 3 minutes. This softens it slightly, making it much easier to slice through.
  • Slice and Season: Cut off the ends of the squash, then slice the rest into approximately 1-inch thick rounds. Scoop out the seeds from each ring. Drizzle with olive or avocado oil, and season with salt and pepper.
  • Roast: Place the squash rings on a baking sheet and roast in a preheated oven at 425°F for about 25 minutes.

Making the Taco Filling

  • Sauté the Base: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they start to become translucent. Stir in all the spices and cook for a minute to release their flavors.
  • Cook the Protein: Add the ground bison to the skillet, breaking it up as it cooks. Once the bison is nearly cooked through, stir in the black beans. Continue cooking until the meat is fully cooked.
  • Add Creaminess and Flavor: Lower the heat, and mix in the cottage cheese and half of the shredded cheese. If you enjoy cilantro, add it now for an extra layer of flavor. Mix everything well.

Assemble and Broil

  • Prepare the Boats: After the squash has roasted, use a fork to shred some of the inside flesh of each ring, creating a “nest” for your filling.
  • Fill the Boats: Spoon the taco filling generously into each spaghetti squash ring. Top with the remaining shredded cheese.
  • Broil: Place the filled rings back into the oven, set to broil, and cook for about 5 minutes or until the cheese is melted and golden.
