Ingredients
  

  • 6 Low-carb croissants I recommend Hero’s low-carb croissants, cut into quarters
  • 1 stick butter
  • 1/4 cup Brown sugar substitute I like Swerve
  • 2 tbsp Sugar-free honey substitute I like ChocZero
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Ground cinnamon to sprinkle on top
  • Ground cardamom to sprinkle on top
  • Sugar-free maple syrup for serving

Instructions
 

  • Prepare the Sweetener Mixture: In a saucepan over medium heat, combine the butter, brown sugar substitute, and sugar-free honey. Stir until melted and combined. Then, pour this mixture into the bottom of your baking dish, spreading it evenly.
  • Arrange the Croissants: Take your low-carb croissants cut into quarters and arrange them snugly over the sweetener mixture in the baking dish.
  • Mix the Custard: In a small bowl, whisk together the whole milk, heavy cream, eggs, vanilla extract, and a pinch of salt until well combined. This is your custard mixture.
  • Combine and Chill: Pour the custard mixture evenly over the croissants, ensuring all pieces are soaked. Sprinkle the top with ground cinnamon and cardamom for that extra flavor punch. Cover with foil and refrigerate for at least eight hours, or overnight. This step is crucial for allowing the croissants to absorb the custard thoroughly.
  • Bake to Perfection: Preheat your oven to 350 degrees Fahrenheit. Bake the French toast, covered, for about 30-40 minutes. You’re looking for the croissants to turn a lovely golden brown and the custard to become bubbly.
  • Serve and Enjoy: Allow the dish to cool on a rack for a few minutes after baking. Then, drizzle your favorite sugar-free maple syrup over the top for that final touch of sweetness.
